Symphony No.4 — the blend and its flavour

Built on highland red sanshō, which grows only in Oku-Hida in Gifu, with nine spices and herbs blended around it — roasted chickpea and cacao nibs among them. It sits well with what the mountains give, and one mouthful carries that richness.

Symphony No.4 — the scene behind the aroma: “A flower that blooms underground”

If a flower bloomed under the earth, what would it smell like? Out of that idea comes a plant we call jibana, the earth flower. It grows by clear riverbanks, and once the rainy season ends, at the start of summer, it blooms underground for four days only. Its seeds, which carry a scent of their own, are gathered, dried in the sun and ground on a stone mill. A sanshō-like aroma rises, and with it something sweet and toasted.
