Juicy Cheese-Topped Hamburg Steak
This recipe is simple, and so good that it turns up on our table about once every two weeks.
It goes well with rice, and with a drink, wine especially. Our favourite way to eat it is to plate it up and pour a little ponzu (citrus-soy sauce) over the top. Excellent.
Just picturing it brings the flavour back.

Equipment you will need
- Heatproof dish
- Oven (the oven function of a microwave oven is fine)
Ingredients (serves 2~3)
- Dish: 1 tsp
- Minced beef and pork: 300g
- Salt: the weight of the meat in grams x 0.8% (use a calculator)
- Panko breadcrumbs: 1 tbsp
- Milk: 2 tbsp
- Onion: 1/2
- Mayonnaise: 1 tbsp
- Ketchup: as needed
- Melting cheese: as needed

A guide to the salt (the amount of salt really matters in this recipe, so please work it out accurately, with a calculator if you can) 150g: [150 x 0.8%] = 1.2g 200g: [200 x 0.8%] = 1.6g 250g: [250 x 0.8%] = 2g 300g: [300 x 0.8%] = 2.4g |
Preparation
- Finely chop the onion.
Method
- Fry the onion in an oiled frying pan until soft and translucent.
- Put all of the ingredients below into a bowl and mix well, always stirring in the same direction, until the mixture turns sticky.
- Dish: 1 tsp
- Minced beef and pork: 300g
- Salt: the weight of the meat in grams x 0.8% (use a calculator)
- Panko breadcrumbs: 1 tbsp
- Milk: 2 tbsp
- Onion: 1/2
- Mayonnaise
- Pack the meat mixture into the heatproof dish, pressing out the air as you go.
- Layer ketchup, as needed, then cheese, as needed, over the top of the meat mixture.


- Bake in the oven at 200°C for 30 minutes.
- Cut it out of the heatproof dish, plate it up, and it is ready.
